Note that some of the eligible restaurants on Happy Dining gift cards are currently offering bonus cards or free slices of cheesecake when buying their gift cards. You could therefore go in a restaurant and pay for $50 worth of gift cards with the Happy Dining gift card and get some bonus cards/free cheesecake free to make the deal even better. Note that the bonus cards/free cheesecake expire and the cards can’t be resold, but if you can redeem them during their eligibility period for personal use then that could be worth considering, even if you resell the $50 worth of gift cards themselves.
