It doesn’t look like there’s any limit as to how many times you can take advantage of this offer beyond the limit of one coupon per transaction, so you can presumably buy multiple $125 gift cards in separate transactions unless you get a cashier who wants to enforce the restriction on a ‘per customer’ basis. The main issue when scaling this deal will be redeeming the $20 coupons by December 30.
